Spill Wine is a cellar and wine bar tucked away in the Sunshine Coast Hinterland. Founded by Jamie Fleming and Clare Hutton, it’s built on a simple idea of good wine, good people and no fuss. Spill was created as a space where anyone, whether new to wine or a seasoned enthusiast, can feel welcome, ask questions and discover something they truly enjoy.

The team loves guiding people through what’s in the glass. From crisp Spanish Albariños to bright, natural Grenache from Australia, the shelves are thoughtfully curated, but the vibe stays relaxed. For them, it’s all about sharing great wine in a space that feels inclusive, down-to-earth, and full of good energy.

We caught up with co-owner Jamie Fleming to chat through his top five wine picks currently in the cellar, and the stories behind each drop.

1. Albero Manzanilla en Rama Saca 2022

WHY WE LOVE THIS WINE

Not your typical sweet sherry that collects dust, this one is a crisp, salty, nutty manzanilla that pairs beautifully with food. A private bottling from Scott Wasley, an expert in Spanish wine, it challenges the traditional perceptions of sherry. This is wine at its best, and it’s absolutely perfect with oysters. For those who enjoy champagne and seafood, this may just blow your mind.

2. Sybille Kuntz Riesling 'Feinherb' Auslese 2019

WHY WE LOVE THIS WINE

Originating from the steepest vineyards in the Mosel, where vines extend their roots up to 40 feet into the slate, this Riesling offers a touch of sweetness, along with remarkable texture and energy. It is structured, slightly sweet and highly refreshing. Ideal for fans of Riesling and even those who might not be yet, this wine is well worth exploring. It’s the kind of bottle best enjoyed cold, perhaps alongside something spicy like green papaya salad from a roadside stand. Unexpected, perhaps, but undeniably effective.

3. Savaterre Chardonay

WHY WE LOVE THIS WINE

This is a bold, full-bodied Chardonnay from Beechworth. Savaterre presents with power, tension and a slightly brooding character upon first opening. With time, it evolves into something remarkable. It’s a wine that benefits from patience, best left to breathe while something else is poured in the meantime, before returning to it for the main event. For those seeking a more relaxed expression from the same winemaker, there’s also a “Little Brother” version. But for the complete experience, this is the one to choose.

4. Sato Pinot Noir "L'Insolite"

WHY WE LOVE THIS WINE

Originally rooted in Japan and now based in New Zealand, Sato Wines practices minimal intervention winemaking, though that shouldn’t be a deterrent. This Pinot Noir is defined by elegance, balance and depth. It offers the classic cherry and red fruit notes typical of Central Otago, complemented by a tarry, earthy undertone and exceptionally fine tannins. With time in the glass, it continues to evolve, revealing greater complexity. It’s an ideal wine to bring to dinner, approachable yet intriguing.

5. Josh Cooper Old Vine Cuvée #1

WHY WE LOVE THIS WINE

Josh Cooper represents a new generation in Victorian winemaking. The son of Alan and Nelly Cooper of Cobaw Ridge, he is forging his own path with wines made from exceptional sites such as Bellgowan and Greytown. This particular wine is bold without being overly heavy, offering notes of black fruit and a characteristic Australian earthiness. It’s the kind of wine that pairs perfectly with a well-cooked steak. While it has the structure to cellar for up to 20 years, it’s also ready to drink now, offering immediate enjoyment.
